To get started sharpening, you simply place your knife on a table or counter top with the cutting edge up. Hold the knife handle securely with one hand. Then let the "V" notch on the sharpener straddle the blade, and use your thumb to apply light pressure as you draw the AccuSharp down past the point of the blade.

When you first use the AccuSharp on a blade, several passes may be required to make sure that your knife's cutting angle conforms to the AccuSharp angle. But once that angle is achieved the first time, it should take just two or three brief passes to put a sharp edge back on your knife--which means that sharpening fits into your busy schedule instead of interfering with it.

Good edge, but takes a lot of metal off
I am sharpener impaired , and have bought lots of stones and sharpeners spending a bunch ($200 plus in all)
This thing puts a great edge on , simply. makes knives a happy, sharp experience.
However, It TAKES A LOT of metal off, so requires cautious use and acknowlegement of the fact that knives you use it on, ain't gonna last forever.

Best knife sharpener ever used.
saw this is my goldbox and gave it a try, wow.. it works very well, had some old kitchen knives that would only crush a tomato, now they slice thru them with razor sharp accuracy. have a really expensive Chef's Choice Sharpener bought years ago, this works better than that and is portable. amazon has got a keeper here. will have to get some more as gift's.

Hands down the best sharpener for the money
I could never get the hang of sharpening steels or stones, and the electric models take up too much space and are expensive. This is a good compromise. Puts a wonderful edge on my Tramontina Professionals, and it's so easy to use. Just flip the knife upside down on the counter and draw the blade through the V a few times. It only takes seconds, and you almost can't mess it up. Just remember to use LIGHT pressure on the blade.

I use the 8" utility knife to slice pineapple, and you know how removing the tough outer skin of a pineapple does a number on the edge of a knife. As soon as I got home, I put it through about half a dozen light swipes on the Accusharp, it sliced through the skin like butter.

I don't know if I'd use it on Japanese knives, since they have a different angle than western style knives, but for regular kitchen knives, this sharpener is a gem. Don't waste your money on those expensive electric ones that take up counter space.

An amazing tool
Simple in design and effective in execution, this knife sharpener really works. Even the cheap kitchen knife I had never succeeded in sharpening before cuts like a good knife now after some 15 passes on this sharpener. An old Swiss Army knife requires just a few passes to regain its original edge. Very impressed and strongly recommended.
